Chicken Gnocchi Soup Tell a Friend

Ingredients:

  • 1 tablespoons - olive oil
  • 1/2 - onion, diced
  • 1 stalks - celery, diced
  • 1 cloves - garlic, chopped
  • 1/2 - carrot, shredded
  • 3 - chicken breasts, cooked and diced
  • 4 cups - chicken stock
  • 2 cups - half and half
  • - salt, to taste
  • - pepper, to taste
  • 1 teaspoons - thyme
  • 16 ounces - potato gnocchi
  • 1 cups - fresh spinach
  • 1 tablespoons - cornstarch
  • Directions:

    Saute onion, celery, garlic, and carrots in olive oil.
    Add chicken, stock, half and half, salt, pepper, and thyme.
    Heat to boiling.
    Add gnocchi.
    Boil for 4 minutes.
    Lower heat and simmer for 10 more minutes.
    Add spinach and cook until wilted.
    Add cornstarch for thickening.
