  • 1 packages - Corn Tortillas (24 ct)
  • 1 pounds - Chicken Breast
  • 1/2 whole - White Onion
  • 6 ounces - Chopped Green Chilis
  • 1 cans - Green Chili Enchilada Sauce
  • 1 cans - Fiesta Nacho Cheese Soup
  • 1 bunches - Cilantro
  • 8 ounces - Shredded Cheddar Cheese
  • Directions:

    1. Preheat oven to 350°.

    2. Boil the chicken until juices run clear, then shred chicken.

    3. Chop onion and cilantro, then saute together with chopped green chilis.

    4. Combine chicken, sauteed onion/chili/cilantro mix, nacho cheese soup, and enchilada sauce in a large bowl.

    5. Coat baking pan with cooking spray, then spoon mixture into tortillas, roll, and place in pan.

    6. Top rolled enchiladas with remaining chicken mixture, then top with shredded cheese.

    7. Bake until cheese is melted.
