Chicken Avocado Salad with Lime & Cilantro Tell a Friend

  • 2 cups - shredded cooked chicken
  • 2 - medium avocados, diced
  • 2 tablespoons - fresh squeezed lime juice, divided
  • - salt to taste
  • 1/4 cups - green onion, thinly sliced
  • 1/2 cups - cilantro, finely chopped
  • 2 tablespoons - mayo or Greek yogurt
  • Directions:

    Mix diced avocados with 1 T. lime juice. Salt to taste.
    Mix mayo (or Greek yogurt) and remaining 1 T. lime juice to make dressing.
    In a large bowl, toss chicken & green onion with dressing until coated. Add the avocado-lime juice mixture and cilantro and gently mix.
