Chicken Asparagus Divan Tell a Friend

  • 2 whole - chicken breasts, split in half
  • - butter, for cooking with
  • 1/2 cups - chicken broth
  • 1/4 cups - chopped scallions
  • 2 tablespoons - flour
  • 1 teaspoons - salt
  • 1/4 teaspoons - pepper
  • 1 cups - light cream
  • 1/4 cups - dry white wine
  • 1/4 cups - grated Swiss cheese
  • 1 pounds - fresh asparagus, cooked
  • 1/4 cups - grated Parmesan cheese
  • Directions:

    Wipe chicken breasts with damp paper towels. Cut breasts in two, and remove skin.

    Saute in butter for 10 minutes on each side; add chicken broth, and simmer for 10 minutes.

    Meanwhile, saute scallions in 3 tablespoons of butter. Add flour, salt and pepper; stir until smooth. Add cream, then wine. Bring to a boil, and simmer for 3 minutes. Remove from heat; add Swiss cheese.

    Place asparagus in buttered baking dish; place chicken on top. Add sauce and sprinkle with Parmesan cheese.

    Bake for 15 minutes.
