Chicken Apple Sausage Quinoa Tell a Friend

Ingredients:

  • 1 pounds - broccoli rabe, stems trimmed, cut into 2-inch pieces
  • 3 tablespoons - olive oil
  • 1 cups - uncooked quinoa
  • 1/2 cups - raisins
  • 1 packages - fully cooked chicken-apple sausages, 12 oz.
  • 1 - sweet onion, chopped
  • 2 cloves - garlic, minced
  • 1/2 cups - sliced almonds, toasted
  • 3/4 teaspoons - salt
  • 1/4 teaspoons - black pepper
  • Directions:

    Bring a large pot of lightly salted water to a boil. Add broccoli rabe and cook until tender, about 3 minutes. Drain and set aside.
    Meanwhile, bring 2 cups of water and 1 tablespoon of the olive oil to a boil in a lidded, medium-size pot. Stir in quinoa and raisins. Turn down to a simmer and cover. Cook 20 minutes or until all liquid is absorbed.
    Heat 1 tablespoon of the olive oil in a large, lidded sauté pan on medium heat. Add sausages and cook 5-7 minutes, turning to brown all sides. Remove sausages to rest.
    To same pan, add remaining tablespoon of olive oil. Sauté onion 3-5 minutes or until softened. Add garlic and broccoli rabe and sauté 3 minutes. Meanwhile, slice sausages on the bias; add to pan along with quinoa mixture, almonds, salt and pepper. Stir to combine and cover. Cook 2 minutes or until heated through.
