Chicken and Rice Lettuce Wraps Tell a Friend

Ingredients:

  • 2 cups - cooked basmati rice
  • 1/2 cups - chopped walnuts
  • 1/3 cups - dried currants
  • 1 - minced shallot
  • 1 - sliced scallion
  • 5 - kalamata olives, minced
  • 1 1/2 cups - shredded cooked chicken
  • - butter lettuce leaves, for wrapping
  • Dressing
  • 1 tablespoons - red wine vinegar
  • 2 tablespoons - olive oil
  • 1/4 teaspoons - kosher salt
  • 1/2 teaspoons - lemon zest
  • 1 teaspoons - honey
  • 1/4 cups - flat-leaf parsley, chopped
  • Directions:

    Mix together the rice, walnuts, currants, shallot, scallion, olives and cooked chicken. Set aside.

    In another bowl, whisk together the red wine vinegar, olive oil, salt, lemon zest, honey and parsley.

    Toss dressing with rice mixture. Serve rice salad wrapped in butter lettuce leaves.
