Chicken and Green Sauce Tell a Friend

Ingredients:

  • 2 tablespoons - oil
  • 8 ounces - frozen spinach, thawed
  • 2 cloves - garlic, crushed
  • 1 teaspoons - nutmeg
  • 3 bunches - watercress
  • 1 ounces - parsley
  • 5 cups - mayonnaise
  • 1 1/4 cups - chicken stock
  • 4 - whole chickens (5 lbs. each), cooked, boned, cut into pieces
  • Directions:

    Saute spinach and garlic in oil; add nutmeg. Cool.

    Process watercress and parsley with steel blade, adding spinach and mayonnaise. Add chicken stock, salt and pepper to taste.

    Toss chicken and sauce and garnish with watercress.
