Chicken and Capers Tell a Friend

Ingredients:

  • 2 pieces - Boneless skinless chicken breasts
  • 1 whole - small onion
  • 1 cups - uncooked rice, white or brown
  • 1 jars - capers
  • 8 ounces - Chicken Broth
  • Directions:

    1. Start the rice cooking, preferably in a rice cooker.
    2. While the rice is cooking dice the onion.

    When the rice has about 20 minutes left:
    1. Warm olive oil to high heat and season chicken breasts to taste with salt and pepper and additional spices.
    2. Brown the chicken breasts a couple of minutes on each side.
    3. Remove from heat and discard oil.
    4. Sautee the onion using butter or a healthy cooking spray.
    5. When onions are ready, add broth. Then stir in capers. Add chicken back in.
    6. Bring to a boil.
    7. Reduce heat to a simmer. Cook until the chicken is done, around 10-15 minutes.

    Serve over rice.

    Brief Description

    Chicken breasts cooked in cherry with capers served over rice. Best served with Okra and tomata or lima beans.
