Cheesy Chicken and Rice Bake Tell a Friend

Ingredients:

  • 2 - boneless skinless chicken breasts, cooked and chopped
  • 4 cups - cooked brown rice
  • 3/4 cups - frozen corn
  • 1 cans - black beans, rinsed and drained
  • 1 cups - Greek Yogurt (or sour cream)
  • 1 cups - cheddar cheese, plus extra for topping if desired
  • 2 tablespoons - cilantro, chopped
  • Directions:

    In a large bowl, combine all ingredients. Make sure the yogurt (or sour cream) and cheese are mixed throughout.
    Transfer to oven safe dish and top with extra cheese.
    Bake 20-25 min at 350 or until heated through. Sprinkle with cilantro before serving.

    Notes

    The original recipe did not call for any seasonings but this definitely needs it. My favorites for this dish are: salt, garlic powder, cumin, and onion powder.

    I prefer this a little creamier so I usually add an extra 1/4 cup or so of the yogurt/sour cream. Also, while the yogurt is definitely healthier, we prefer the flavor of the sour cream.

    We also like to top it with chopped fresh tomatoes before serving, and my husband likes it with salsa.

    This meal freezes and reheats well.
