Cashew Shrimp Tell a Friend

Ingredients:

  • 1 pounds - shrimp, cut into half
  • 4 teaspoons - corn starch
  • 1/4 teaspoons - sugar
  • 1/4 teaspoons - baking soda
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - pepper
  • 1/2 cups - vegetable oil
  • 1/2 cups - onions, chopped
  • 1 cloves - garlic
  • 1 cups - zucchini, chopped
  • 3 1/2 cups - cooked rice
  • 3/4 cups - cashews
  • - sweet red pepper rings
  • Directions:

    Mix together the corn starch, sugar, baking soda, salt and pepper, and coat the shrimp in this mixture.

    Heat oil in skillet and saute shrimp. Remove and set aside.

    Saute onions, red pepper, garlic, and zucchini. Stir in shrimp, rice and cashews. Cook until heated through.

    Garnish with red pepper rings.
