  • 1 cups - cashews or macadamia nuts
  • 1 cups - water
  • 1/2 teaspoons - onion powder
  • 1/4 teaspoons - garlic powder
  • 1/4 teaspoons - salt
  • 1/2 - lemon, juiced
  • Directions:

    1. Soak cashews in water for at least 2 hours or overnight.

    2. Place cashews, with their soaking liquid, and remaining ingredients into a food processor or blender and process on high for about 5 minutes. You may need to scrape the sides down intermittently. It is done when the mixture is completely smooth and no longer tastes grainy.

    3. You can add more liquid if you'd like the dressing thinner.

    4. There are so many options for expanding on this - blend in herbs for a creamy herb dressing, or blend in "meatier" vegetables such as cooked artichoke, broccoli or zucchini for a tasty dip. You can also stir 1-2 tablespoons into soups or casseroles to give a creamy texture.
