Carrot-Seaweed Medley Tell a Friend

  • 1 1/2 teaspoons - toasted sesame oil
  • 1/2 teaspoons - safflower oil
  • 1/2 - yellow onion, cut in thin half-moons
  • 1 1/2 - large carrots, cut in matchsticks
  • 1/2 - red bell pepper, chopped into 1/2-inch chunks
  • 1/2 cups - frozen edamame, shelled
  • 1/2 cups - arame or hijiki seaweed, soaked 5 min. in cool water, then drained
  • 1/2 cups - water
  • 1 teaspoons - Bragg Liquid Aminos, or more, to taste
  • 2 tablespoons - thinly sliced green onions
  • Directions:

    Heat oils in large saute pan or wok. Add yellow onion and cook for 5 minutes. Stir in carrot, pepper, edamame, seaweed, and water. Cover and simmer on low for 15 minutes. Remove cover and add Bragg Liquid Aminos. Cook 3-5 more minutes, then stir in green onion.
