  • 1 pounds - carrots, grated thinly
  • 1/2 - purple onion
  • 1/2 cups - cilantro
  • 1/2 - cucumber
  • 2 - to 4 Serrano peppers
  • - tomato, optional
  • 4 - to 6 limes, juiced
  • Directions:

    Grate carrots finely; put in bowl and set aside.

    In food processor, grate purple onion, cilantro, Serrano peppers, and cucumber; mix well.

    Put food processor mixture with carrots in bowl. Mix well. If you want, chop up tomatoes and add to bowl. Pour in lime juice and stir together thoroughly.
