  • 1 cups - flour
  • 1 cups - oatmeal
  • 3/4 cups - brown sugar
  • 1/2 teaspoons - baking soda
  • 1/4 teaspoons - salt
  • 3/4 cups - melted butter
  • 1 cups - chocolate chips
  • 1/2 cups - chopped nuts
  • 3/4 cups - caramel topping
  • 3 tablespoons - flour
  • Directions:

    For the center filling, in a small bowl, mix the caramel topping and flour together and set aside.

    In another bowl, for the cookie bars mix together the flour, oatmeal, brown sugar, baking soda, salt and melted butter until well blended.

    Spread half of the dough on the bottom of a lightly-greased 8-x-8-inch baking pan, and bake at 350 degrees F for 10 minutes.

    Remove and top with the caramel/flour mixture, chopped nuts, and chocolate chips. Drop the rest of the dough on top and lightly press down.

    Bake for 15 to 20 minutes more or until lightly browned. Cool and cut into squares.

    (You can double this recipe and use a 9-x-13-inch baking pan).

    This is a Christmas tradition in our home, and I've been making them for almost 20 years. My sister-in-law sent me the recipe our 1st year of marriage when my husband wouldn't stop talking about them. We don't know if they're named after someone or if it's because of all the caramel in them, but Christmas is not Christmas in our house until we've made at least 2 batches of carmellitas.
