    Brief Description

A fresh tomato and basil salad with marinated chicken breasts topped with mozzarella.

    Main Ingredient:

    chicken

    Category:  Poultry

    Cuisine:  Italian

    Prep Time: 15 min
    Cook Time: 20 min

    Notes

I have used balsamic vinegar in place of red wine vinegar, still with terrific flavor. Also used grape tomatoes instead of dicing whole tomatoes and have substituted fresh spinach for fresh basil. The chicken is delicious whether you choose to serve it with pasta or some other side. Make it dairy-free by eliminating the mozzarella.
