Cape Cod Blueberry Pie Tell a Friend

  • 6 cups - Blueberry
  • 1 whole - Graham Cracker Pie Crust
  • Directions:

    In a small bowl mix 3 Tbsp. flour, ¼ t salt, 1/3 c sugar and 1/3 c water until well blended
    In a large saucepan combine ½ c sugar and 1cup blueberries and 2/3 c water. Bring to a boil. Stir part of the mixture into the flour mixture and then combine stirring well and bring back to a boil. You really need to mix it here to avoid lumps. Stir in ½ t white vinegar. Add 5 cups fresh blueberries. (Do not use frozen)
    Turn into the pie crust of choice. I used graham cracker but saw a shortbread one that would be good.
    Cover with handi wrap and refrigerated for 4 hours or until set.
    Serve with whipped cream,
