Ingredients:

  • 4 - chicken breasts, cooked, chopped
  • 1/2 - bell pepper, diced
  • 1 stalks - celery, diced
  • 1/2 - onion, diced
  • 3 tablespoons - butter
  • 3 tablespoons - flour
  • 1 cups - chicken broth
  • 1 cups - black olives, sliced
  • 1/4 cups - pimiento
  • 1/2 cups - mushrooms, sliced
  • 1 cups - light cream
  • 1/2 teaspoons - salt
  • 1/2 cups - Swiss cheese, grated
  • 1/3 cups - almonds, slivered
  • - cooked rice, for serving with
  • Directions:

    Saute bell pepper, onion, and celery in butter until crisp tender. Stir in flour and whisk in broth, continuing to cook over medium heat until thickened.
    Add cooked chicken and remaining ingredients and stir well.
    Pour into casserole dish (9x13-inch); top with slivered almonds. Bake at 350° F uncovered for 30 minutes.
    Serve over rice.
