Ingredients:

  • 2 cans - black beans, rinsed, drained
  • 1 cans - diced tomatoes, 28 oz.
  • 1 packages - frozen loose-pack pepper stir-fry vegetables, 16 oz.
  • 2 cups - frozen cut okra
  • 2 1/2 teaspoons - Cajun seasoning, or more, to taste
  • - hot cooked white or brown rice, optional
  • Directions:

    1. In a 3-1/2 or 4-1/2 quart slow cooker combine beans, undrained tomatoes, frozen stir-fry vegetables, okra, and Cajun seasoning.

    2. Cover and cook on low-heat setting for 6-8 hours or on high-heat setting for 3-4 hours.

    3. If desired, serve over hot cooked rice. You can add meat if you want.
