  • 1 heads - Cabbage, finely shredded
  • 2 pounds - Potatoes, or more - as desired
  • 3 tablespoons - Butter Buds
  • 1 cups - Hot Water
  • - Carrots, as desired
  • - Celery, as desired
  • 1 - Large Onion, diced
  • 1 packages - Sm. Mexican Velveeta, cubed
  • - Salt, As desired
  • - Pepper, As desired
  • Directions:

    Dissolve Butter Buds in 1 cup hot water. Add to soup pot and add another 7 cups of water. Shred cabbage, dice potatoes, chop celery, carrots and onions - then add all to soup pot. Salt and pepper as desired. Bring to a boil and then turn down low for 1 hr. Add Velveeta just before serving - be careful to not scorch the cheese once it is melted in the soup (very easy to do). : )

    We have tried the low-fat Velveeta and it does not work very well. It turned out a little watery - not good. :/
    My kids love this and everyone always asks for the recipe. No one knows it has cabbage in it because it cooks down. It just seems like a variation of potato soup!
