Cabbage Soup Tell a Friend

  • 2 cloves - garlic, minced
  • 1/2 - yellow onion, chopped
  • 1/2 cups - chopped carrots
  • 3 cans - nonfat broth, use any kind - beef, chicken or vegetable
  • 1 tablespoons - tomato paste
  • 2 cups - chopped cabbage
  • 1/2 cups - green beans
  • 1/2 teaspoons - basil
  • 1/2 teaspoons - oregano
  • - salt and pepper, to taste
  • 1/2 cups - chopped zucchini
  • Directions:

    Spray pot that you want to make the soup in with non-stick cooking spray. Sauté onions, carrots and garlic for 5 minutes.

    Add broth, tomato paste, cabbage, green beans, basil, oregano and salt & pepper to taste.

    Simmer for a about 5-10 minutes until all vegetables are tender; then add the zucchini and simmer for another 5 or so minutes.

    This is a very filling soup, can be made ahead and in big quantities. Great for lunch!
