Butter Beans, Italian Sausage, and Chard Pan Stew Tell a Friend

  • 1 tablespoons - olive oil
  • 4 - cooked sweet Italian chicken sausage links (3 oz. each), sliced or cut up
  • 1 - medium onion, cut into thin wedges
  • 2 tablespoons - fresh oregano leaves
  • 2 cloves - garlic, minced
  • 1 cups - reduced-sodium chicken broth
  • 12 cups - fresh Swiss chard, stemmed and torn
  • 1 cans - 15 ounces butter beans, rinsed and drained
  • 2 tablespoons - balsamic vinegar
  • -   Shaved Parmesan cheese
  • Directions:

    In a very large skillet heat oil over medium heat. Add sausage and onion wedges; cook and stir 6 to 8 minutes or until browned.

    Add oregano and garlic to skillet. Cook for 1 minute. Add broth. Bring to boiling; reduce heat. Boil gently, uncovered, 3 to 4 minutes or until reduced by about half.

    Gradually add greens, tossing until wilted before adding more. Add butter beans and vinegar; heat through.

    Sprinkle with cheese.
