Brownies – Healthy, Grain-free Tell a Friend

  • 2 cups - black beans, I use 1 can, drained
  • 3 each - eggs, lightly beaten, 1/4 cup per egg
  • 1/3 cups - melted coconut oil
  • 1/4 cups - cocoa powder, raw
  • 1/8 teaspoons - sea salt
  • 2 teaspoons - vanilla
  • 1/2 cups - raw honey, I use xylitol and stevia instead
  • 1/2 cups - bittersweet chocolate, chopped
  • 1/3 cups - walnuts, finely chopped, optional
  • Directions:

    These are SO simple to make – takes about 5 minutes!! Preheat oven to 350°. Grease an 8×8 pan (not aluminum! Not leaded glass! I use a Pampered Chef baking stone). Toss all but the final 2 ingredients (the chopped up chocolate and walnuts) into a blender or food processor and blend until smooth. Fold in the chopped chocolate and walnuts (I do this right in the blender). Pour into the pan and bake for about 30 minutes. Adding chocolate ganache on top makes it seem very elegant.
