Broiled Vegetables and Bell Peppers in Sauce Tell a Friend

Ingredients:

  • 1 - large onion, cut in wedges
  • 2 - medium beets
  • 2 - sweet potatoes, cut up
  • 1 - red bell pepper, cut into strips
  • 1 - yellow bell pepper, cut into strips
  • 4 - portobello mushrooms
  • - olive oil spray
  • 3/4 teaspoons - salt
  • 1/2 teaspoons - pepper
  • 1 - batch of yogurt cheese
  • 1 tablespoons - fresh lemon juice
  • 1 teaspoons - minced garlic
  • Directions:

    In blender, puree the yogurt cheese, lemon juice and minced garlic; set aside.

    Mix vegetables in large bowl, and spray with olive oil. Sprinkle with salt and pepper.

    Broil 6 minutes per side. Remove to platter.

    Top with pureed yogurt cheese, lemon juice and garlic.
