Broccoli and Cheese Casserole Tell a Friend

Ingredients:

  • 1 pounds - fresh or frozen broccoli, fresh will taste best, but frozen is faster
  • 8 - green onions, chopped
  • 8 ounces - small cherry tomatoes, halved, quartered
  • 2 - large eggs, beaten
  • 8 ounces - fat-free cottage cheese, strained
  • 3 cloves - garlic, minced
  • - salt and pepper, to taste (along with whatever other seasoning you like)
  • 4 ounces - shredded reduced-fat cheddar cheese
  • Directions:

    Preheat oven to 375.

    Cook broccoli in a large saucepan for 2-3 minutes. Drain and transfer to bowl.

    Add the green onions and cherry tomatoes to the broccoli, mix well and spoon in to oven-safe casserole dish.

    Whisk eggs, cottage cheese and garlic until smooth. Season well.

    Pour egg mixture over vegetables and mix together. Sprinkle the cheese on the top and cook in oven for 15-20 minutes or until mixture has set.

    Remove from oven and serve.
