Bonefish Chickpeas or Garbanzo Beans Tell a Friend

  • 1 cans - 15-19 oz. chickpeas, drained
  • 1 - small onion, finely chopped
  • 1 - tomato, diced
  • 1 tablespoons - basil, fresh or dry
  • 1 bunches - spinach, about a handful
  • 2 tablespoons - olive oil, plus more (or water), to moisten
  • - salt and pepper
  • Directions:

    Saute all ingredients (except spinach) for about 25 minutes (or a little longer until some of beans start to mush).

    Add spinach and cook another 5 minutes.

    To make this a quick and easy main dish, saute some sausage with the onions until no longer pink before adding chickpeas.
