Ingredients:

Cake
  • 1 cups - brown sugar
  • 1 cups - white sugar
  • 2 1/2 cups - flour, sifted
  • 1 cups - buttermilk
  • 1 cups - oil
  • 2 - eggs
  • 1 teaspoons - salt
  • 1 teaspoons - baking soda
  • 1 teaspoons - cinnamon
  • 1 teaspoons - nutmeg
  • 1 teaspoons - vanilla
  • 1 cups - coconut
  • 1 cups - pecans, chopped
  • Frosting
  • 1 packages - cream cheese, softened, 8 oz.
  • 1/2 sticks - oleo, softened
  • 1 boxes - powdered sugar, 1 pound
  • 1 cups - pecans, chopped
  • 1 cups - coconut
  • 2 teaspoons - vanilla
  • 2 tablespoons - milk, or more, for spreading consistency
  • Directions:

    Sift flour and mix with salt and spices; set aside.

    Cream together the sugars, eggs and oil. Beat the buttermilk and baking soda well by hand; add to creamed mixture. Gradually add dry ingredients.

    Add vanilla, coconut and pecans. Mix and bake in layers or a tube or bundt pan at 350 degrees F for 50 minutes (makes two 9-inch or three 8-inch layers).

    Frosting:
    Mix together all frosting ingredients until well blended. Frost cooled cake.
