Blueberry Muffins Tell a Friend

Ingredients:

  • 1 sticks - oleo, softened
  • 1/2 cups - Wesson vegetable oil
  • 2 - eggs
  • 3 tablespoons - Butavan (OR 1 T. vanilla with 1 t. coconut and butter flavoring)
  • 1 cans - blueberries (15 oz.), reserve juice
  • 1 cups - buttermilk
  • 4 1/2 cups - flour
  • 2 tablespoons - baking powder
  • 2 cups - sugar
  • Directions:

    Mix oil and oleo; add and mix in sugar, eggs, flour, Butavan, and baking powder slowly.

    Add buttermilk and juice from blueberries. Mix well and stir in blueberries.

    Bake at 400 degrees F for 20 minutes in muffin tins sprayed with Baker's Joy.

    Will keep in fridge for 2 weeks if stored tightly.
