Ingredients:

  • 4 1/2 tablespoons - Butter, melted and cooled
  • 1/3 cups - coconut flour
  • 2 tablespoons - full fat sour cream
  • 4 - Eggs
  • 1/4 teaspoons - salt
  • 1/4 teaspoons - baking powder
  • 1 1/3 cups - sharp cheddar
  • Directions:

    Preheat oven to 400 degrees and grease muffin pan
    Combine melted (cooled) butter, eggs, salt, and sour cream - whisk
    Add coconut flour and baking power and stir until combined
    Stir in cheese
    Drop batter into 12 greased muffin tins
    Bake 15 minutes or until tops are brown
