Best Yellow Squash Casserole Tell a Friend

  • 2 cups - sliced yellow squash
  • 1/4 cups - chopped onion
  • 16 - Ritz or buttery round crackers, crushed
  • 1/2 cups - shredded Cheddar cheese
  • 1 - egg, beaten
  • 1/4 cups - plus 1/8 C. milk
  • 1/8 cups - butter, melted
  • 1/2 teaspoons - salt
  • 1 - ground pepper to taste
  • 1 tablespoons - butter
  • 1 - banana pepper or other , chopped Optional
  • Directions:

    Preheat oven to 400 degrees
    In a small amount of water cook the squash & onion & pepper until tender - about 3 mins. DO NOT OVER COOK! Drain well & place in large bowl.
    Mix cracker crumbs & cheese. Stir half into the cooked squash.
    In small bowl combine egg & milk. add to squash.
    Stir in 1/8 C. melted butter, salt, pepper.
    Spread in greased square bowl.
    Sprinkle with remaining cracker mixture & dot with butter.
    b ake for 25 minutes or until lightly brown.

    Brief Description

    May add meat to this & make it your main dish. Nice & crispy topping.
