Ingredients:

  • 1 2/3 cups - Sugar
  • 2 1/2 cups - Flour
  • 1 1/2 teaspoons - Baking soda
  • 1 1/4 cups - Bananas, mashed
  • 2/3 cups - Nuts, if desired
  • 2/3 cups - Buttermilk, or use 2/3 c. milk and add 2 tsp lemon juice
  • 2/3 cups - Margarine
  • 2 - Large eggs
  • Directions:

    1. Soften butter and blend, then beat in sugar.
    2. Add eggs and beat until fluffy.
    3. Mix flour and baking soda and add to butter mixture alternately with buttermilk.
    4. Puree or mash bananas and add to mixture.
    5. Fold in nuts. Put in 2 loaf pans (greased) and bake at 350° for 30-35 minutes.
