  • 1 1/2 pounds - lean ground beef
  • 1/2 - sweet yellow onion, peeled, diced
  • 1 cloves - garlic, minced
  • 1 cans - black beans, rinsed, drained
  • 1 packages - taco seasoning mix
  • 1 cans - red enchilada sauce
  • 8 - medium flour tortillas
  • 3 cups - shredded cheese
  • - Sliced olives, fresh cilantro, sour cream, optional garnishes
  • Directions:

    Preheat oven to 350° F, and spray a 9-x-13-inch baking pan with cooking spray.

    In a large skillet, saute onion and garlic in a little bit of olive oil just until slightly tender (about 3-4 minutes); add ground beef to the skillet over medium-high heat and cook until browned and cooked through, breaking up the beef into small pieces while it cooks.

    Stir in the beans and taco seasoning mix along with 1/4 of the can of enchilada sauce, and heat for 5-8 minutes allowing the seasonings to blend and beans to heat through. Remove from heat and stir in 1 cup of the shredded cheese.

    Assemble enchiladas by filling each flour tortilla with about 1/8 of the meat mixture, rolling up to close and placing seam-side down in the prepared baking dish.

    Pour remaining enchilada sauce over top of rolled-up enchiladas and sprinkle remaining cheese over top of all. Bake uncovered for 20 minutes.

    Serve immediately.

    Ground beef with black beans, onion and garlic, cheese and some red sauce, baked in tortillas topped with red sauce and cheese. Yummy goodness!
