Ingredients:

  • - baked tortilla chips, multi-grain is nice
  • 1 cans - black beans, rinsed, drained
  • 1 cans - southwest corn (corn with peppers), drained
  • 1/2 cups - salsa
  • 1 cups - shredded Monterrey Jack cheese, or cheddar, if you prefer
  • - salsa, sour cream, guacamole, for serving with, as desired
  • Directions:

    In a small bowl combine the black beans, corn, and salsa. Mix until thoroughly combined.

    Place tortilla chips on baking tray and top with black bean mixture. Sprinkle cheese over top.

    Turn oven onto high heat broil and place nachos in oven (keeping a close eye on them) for 3-6 minutes until cheese is melted and nachos are heated through.

    Serve with desired garnishes or toppings.
