Basic Quiche Tell a Friend

  • 1 - 9-inch unbaked pie shell
  • 1 - egg white, slightly beaten
  • 4 - bacon slices
  • 1/2 pounds - natural Swiss cheese (about 2 cups), grated
  • 4 - eggs
  • 1 1/2 cups - half and half OR light cream
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - nutmeg
  • - dash of pepper
  • Directions:

    Brush inside of pie shell with egg white; refrigerate.

    Preheat oven to 375 degrees F.

    Make filling: Fry bacon until crisp; drain and crumble. Sprinkle over bottom of pie shell. Sprinkle cheese over bacon.

    In medium bowl, with wire whisk or rotary beater, beat eggs with half-and-half, salt, nutmeg and pepper just until combined, but not frothy. Slowly pour into pie shell.

    Bake, placed on low rack in oven, 35 to 40 minutes, just until puffy and golden.

    Remove to wire rack to cool for 10 minutes before serving.
