Banana Nut Cake Tell a Friend

Ingredients:

  • 1/2 cups - shortening
  • 1 1/2 cups - sugar
  • 2 - eggs, beaten
  • 2 cups - sifted flour
  • 1 1/4 teaspoons - baking powder
  • 1/2 teaspoons - salt
  • 3/4 teaspoons - baking soda
  • 1/4 cups - buttermilk
  • 1 cups - mashed bananas
  • 1 teaspoons - vanilla
  • 1 cups - chopped pecans
  • Directions:

    Cream together the sugar and shortening in a large bowl; add beaten eggs. Mix for 2 minutes, then add mashed bananas (3 if large bananas or 4, if small).

    Add buttermilk; then stir in the flour, salt, baking powder and baking soda. Add vanilla and pecans and fold in well.

    Grease and lightly flour a 9-by-13-inch baking pan; pour batter into pan, spreading evenly.

    Bake for about 40 minutes at 350 degrees F or until toothpick inserted in center comes out clean.
