Banana Bread Pudding with Rum Sauce Tell a Friend

Ingredients:

  • 1 loaves - banana bread
  • 3 - large bananas, sliced
  • Pudding
  • 2 cups - milk
  • 1 cups - heavy cream
  • 1/2 cups - sugar
  • 3 - large egg yolks, whisked together
  • 1 - large egg
  • 1 tablespoons - vanilla
  • 1 teaspoons - nutmeg
  • pinchs - salt
  • Rum Sauce
  • 4 tablespoons - butter
  • 3 tablespoons - brown sugar
  • 2 tablespoons - lemon juice
  • 1/2 cups - rum
  • 1/4 cups - water
  • 2 cups - whipping cream, whipped
  • Directions:

    For Pudding:
    Whisk together the milk, heavy cream and sugar. Add whisked egg yolks, egg, vanilla, nutmeg, and salt. Set aside.

    Layer casserole with sliced banana bread, banana slices, and cover with custard (pudding); repeat layers.

    Bake at 350 degrees F for 45 minutes.

    Meanwhile, for Rum Sauce:
    In a saucepan on the stove, melt butter, and then whisk in the brown sugar, lemon juice, rum and water. Bring to a boil and cook for 5 minutes.
    Serve in a pitcher with bowl of whipped cream for topping the banana bread pudding.
