Ingredients:

  • 2 cups - flour
  • 1 teaspoons - baking soda
  • 1 teaspoons - salt
  • 1/2 teaspoons - ground cinnamon
  • 1/2 teaspoons - ground nutmeg
  • 2/3 cups - shortening
  • 1 1/4 cups - sugar
  • 2 - eggs
  • 1 teaspoons - vanilla extract
  • 1/4 cups - buttermilk
  • 1 cups - ripe bananas, mashed
  • 2 - apples, peeled, cored, shredded

    Notes

    Preheat oven to 375 degrees F. Grease and flour 24 muffin cups or use liners.

    Sift together flour, baking soda, salt, cinnamon and nutmeg, and set aside.

    In a large bowl, cream together shortening and sugar until light and fluffy; beat in eggs one at a time. Stir in vanilla and buttermilk.

    Beat in the flour mixture, mixing just until incorporated. Fold in mashed bananas and shredded apples.

    Fill each muffin cup half full. Bake for 20 to 25 minutes or until toothpick inserted in center of muffin comes out clean.
