  • 12 ounces - ziti pasta
  • 2 teaspoons - olive oil
  • 1 - onion, Chopped
  • 3 cloves - garlic, minced
  • 2 - carrots, Chopped
  • 1 - celery rib, Chopped
  • 6 ounces - black olives, Sliced
  • 10 ounces - ground beef
  • 1/2 cups - dry white wine
  • 2 tablespoons - flour
  • 1/2 cups - low-fat milk
  • 1 cans - tomato sauce, 15 oz. each
  • 3/4 teaspoons - dried oregano
  • 1/2 teaspoons - dried rosemary
  • 1/2 teaspoons - salt
  • 1/4 teaspoons - fresh ground black pepper
  • 4 ounces - mozzarella cheese, Shredded
  • 1/4 cups - parmesan cheese
  • Directions:

    1. Heat a large pot of water to boiling, and cook ziti until just tender. Drain well. Transfer to large bowl.

    2. Meanwhile, in large skillet, heat oil until hot but not smoking over medium heat. Add onion and garlic and cook, stirring frequently, until onion has softened, about 7 minutes. Add carrots and celery and cook until vegetables have softened, about 5 minutes longer.

    3. Preheat oven to 400 degrees F. Spray a shallow 3-quart baking dish with nonstick cooking spray.

    4. Stir the beef into the vegetable mixture and cook, until no longer pink, about 4 minutes. Stir in olives. Add wine and cook until liquid has almost evaporated, about 5 minutes longer. Stir in flour until well combined. Gradually stir in the milk and cook until the mixture is slightly thickened, about 4 minutes.

    5. Stir in the tomato sauce, oregano, rosemary, salt and pepper and cook until flavors have blended, about 4 minutes longer. Add meat mixture to the ziti and toss well to combine.

    6. Spoon the ziti mixture into the prepared baking dish and bake for 10 minutes. Sprinkle with mozzarella and Parmesan on top and bake for 5 minutes longer, or until cheese has melted and the pasta is piping hot.
