Baked Peppers with Ricotta and Basil Tell a Friend

  • 3 - large peppers
  • - olive oil
  • 2 cups - ricotta cheese
  • 1/2 cups - chopped basil
  • 1/2 cups - chopped onions
  • 1/2 cups - chopped parsley
  • - salt and pepper
  • 2 - eggs
  • Directions:

    Singe the peppers, place in a plastic bag and remove skins.

    Cut peppers in half and clean; drizzle with olive oil.

    Mix together ricotta, basil, onions, parsley, salt and pepper. Beat in the eggs.

    Fill peppers with mixture and bake at 350 degrees F for 30 minutes.

    Garnish with basil leaves.
