Ingredients:

  • 1/2 cups - all-purpose flour
  • 1 1/2 cups - corn meal
  • 1 tablespoons - baking powder
  • 1/4 teaspoons - baking soda
  • 2 tablespoons - sugar
  • 1/2 teaspoons - cayenne pepper
  • 1 teaspoons - salt
  • 1 - egg, beaten
  • 1/2 cups - milk
  • 4 tablespoons - butter, melted
  • 1 tablespoons - dried minced onion
  • 1 1/2 teaspoons - finely chopped dill
  • - non-stick cooking spray
  • Directions:

    Preheat oven to 425 degrees F and spray a mini-muffin pan with non-stick cooking spray.
    Combine all dry ingredients in a large bowl and set aside.
    In another bowl, beat the egg and stir in milk and melted butter.
    Gently mix the wet ingredients into the dry ingredients; do not over mix.
    Scoop about 1 tablespoon of batter into each muffin cup.
    Bake for 8 minutes; then let sit for 5 minutes in pan to cool before serving.
