Baked Eggplant Tell a Friend

Ingredients:

  • 1 - medium eggplant, pared, cut into 1/2-inch cubes
  • 1 pounds - canned solid pack tomatoes
  • 1 - small green pepper, chopped
  • 1 stalks - celery, chopped
  • 1 - medium onion, chopped
  • 1/4 pounds - fresh or canned mushrooms, chopped
  • 1/2 teaspoons - salt
  • 1/2 teaspoons - garlic powder
  • 1/2 teaspoons - oregano
  • Directions:

    Parboil eggplant in a small amount of water for 6 minutes. Drain.

    Combine other ingredients in a large bowl. Arrange tomato mixture and eggplant in layers beginning and ending with tomato mixture.

    Bake at 350 degrees F for 1 hour.
