Baby Spinach and Strawberry Salad Tell a Friend

Ingredients:

Salad
  • 6 cups - baby spinach, use 6-8 cups, as desired, washed and dried
  • 1 - section (about 3 inches) jicama, peeled, sliced, cut into matchsticks
  • 2 - oranges, peeled, cut or broken into sections
  • 10 - strawberries, or 12, as desired, washed, sliced
  • Dressing
  • 3 tablespoons - apple cider vinegar or other light vinegar
  • 1/3 cups - fresh orange juice
  • 2 teaspoons - honey
  • 1 teaspoons - Dijon mustard
  • 2 teaspoons - finely minced shallots
  • 5 tablespoons - olive oil
  • 1/4 teaspoons - kosher salt
  • - water, as needed; taste first and decide
  • Directions:

    Place spinach in a salad bowl.

    To make dressing, in a bowl whisk together the vinegar, juice, honey, mustard, shallots, oil and salt.

    Just before serving, drizzle vinaigrette over the salad. Add oranges and strawberries and drizzle more over them.

    Serve immediately.
