Avocado Egg Salad Tell a Friend

  • - juice of 1 lemon
  • 1/4 cups - mayonnaise
  • 1 tablespoons - water
  • 1 - hard-cooked egg yolk
  • - salt and pepper, to taste
  • 5 - hard-cooked eggs, chopped
  • 1 - avocado, peeled, chopped
  • 1/4 cups - red onion, sliced
  • - tomato slices, for serving
  • 1/4 cups - toasted walnuts
  • - lemon zest
  • Directions:

    In a large bowl stir together lemon juice, mayonnaise and water. Using a fork, mash in the hard-cooked egg yolk. Season to taste with salt and pepper.

    Add the chopped hard-cooked eggs, avocado and the red onion; stir to coat.

    Serve mixture over tomato slices, topped with walnuts and lemon zest. Season with additional salt and pepper, if needed.
