Ingredients:

  • 1 - medium red bell pepper, sliced
  • 1/4 pounds - mushrooms, sliced
  • 1 packages - 10 oz. frozen asparagus spears, thawed, cut into thirds)
  • 2 tablespoons - butter
  • 1/2 cups - chopped onion
  • 8 - eggs
  • 1 cups - milk
  • - salt and pepper
  • 1 packages - 4 oz. shredded mozzarella cheese
  • - dried basil leaves
  • Directions:

    Melt butter and saute red pepper, mushrooms, asparagus and onion.

    Combine eggs, milk, cheese and spices; pour over sauteed vegetables and bake at 350 degrees F for 20 minutes.
