Apricot Peanut Butter Muffins Tell a Friend

Ingredients:

  • 1 3/4 cups - unsifted flour
  • 2 1/2 tablespoons - sugar
  • 2 1/2 teaspoons - baking powder
  • 1 teaspoons - salt
  • 1/4 cups - vegetable shortening
  • 1/4 cups - creamy peanut butter
  • 1 - egg, slightly beaten
  • 3/4 cups - milk
  • 2 tablespoons - apricot preserves, or up to 1 tablespoon more, as needed
  • Directions:

    Sift together flour, sugar, baking powder and salt; cut in shortening and peanut butter with a pastry blender.

    Add egg and milk (do not over stir).

    Spoon into greased muffin tins, and top each muffin with 1/2 teaspoon preserves.

    Bake at 375 degrees F for 25 minutes.
