Apple Gorgonzola Salad Tell a Friend

Ingredients:

Salad
  • 8 ounces - romaine lettuce, chopped
  • 1 - Granny Smith apple, chopped
  • 2 tablespoons - gorgonzola cheese, crumbled
  • 2 ounces - spiced walnuts, chopped
  • 1/4 cups - dried cranberries
  • 1/2 cups - Italian vinaigrette, recipe below
  • Italian Vinaigrette
  • 1/3 cups - white wine vinegar
  • 3/4 cups - olive oil
  • 1 teaspoons - salt
  • 3/4 teaspoons - oregano
  • 1/2 teaspoons - dry mustard
  • 1/8 cups - red onion, finely chopped
  • 1 1/2 teaspoons - chopped garlic
  • 1 pinchs - black pepper
  • Directions:

    1. Wash and dry lettuce in a colander.

    2. Chop lettuce into 1-inch thick slices.

    3. Slice off 2 sides of an apple along the side of the core.

    4. Cut long slices for garnish.

    5. Remove the core and dice the rest of the apple.

    6. Mix all ingredients for the dressing in a small bowl.

    7. Pour over the lettuce.

    8. Add apples, walnuts, cranberries and cheese.

    9. Toss well.

    10. Place remaining sliced apples on top for garnish.
