  • 1/3 cups - olive oil
  • 2 cloves - garlic, finely chopped
  • 1 - large onion (6 ounces), thinly sliced and separated into rings
  • 1 - eggplant (1 pound), peeled, cut in 1/2-inch cubes
  • 4 - small zucchini, thinly sliced
  • 1 - medium red pepper, seeded, cut into thin strips
  • 4 - medium tomatoes, peeled, quartered
  • 1 teaspoons - crushed dried basil
  • - salt and pepper, to taste
  • Directions:

    In a 3-quart microwave-safe dish, mix together oil, garlic, onion and eggplant. Cover with plastic wrap. Microwave on high for 4 to 5 minutes.

    Add zucchini, red pepper, tomatoes, basil and salt and pepper; lightly stir together.

    Microwave, covered, at high - stirring once midway - for 5 minutes. Let stand at room temperature for 5 minutes before serving.
