Almond Coconut Pancakes (GF) Tell a Friend

Ingredients:

  • 1 1/4 cups - water
  • 2 - eggs
  • 1 1/2 cups - Almond Flour
  • 1/2 cups - gluten-free oat flour
  • 1/2 cups - millet flour
  • 1/2 teaspoons - salt
  • 1 teaspoons - baking soda
  • 2 teaspoons - almond extract
  • 3 tablespoons - honey
  • 2 tablespoons - oil
  • 1 cups - angel flake coconut
  • Directions:

    In a Large bowl, stir together all ingredients except coconut flakes until batter is smooth. Gently stir in coconut. Ladle pancake batter onto a hot oiled griddle. Turn pancakes when bubbles appear and edges are golden brown. You must use a thin spatula to quickly slide and flip the pancakes because they're so delicate.
