Apricot Tortoni

Ingredients:

  1. 1/3 cups - slivered almonds
  2. 3 tablespoons - melted butter
  3. 1 cups - vanilla wafer crumbs
  4. 1 teaspoons - almond extract
  5. 3 pints - vanilla ice cream softened
  6. 12 ounces - apricot preserves
  7. 1/3 cups - slivered almonds
  8. 3 tablespoons - melted butter
  9. 1 cups - vanilla wafer crumbs
  10. 1 teaspoons - almond extract
  11. 3 pints - vanilla ice cream softened
  12. 12 ounces - apricot preserves

Directions:

Combine almonds, butter, vanilla wafer crumbs, and almond extract in a blender or food processor until fine crumbs.
Line square cake pan with foil. Pat 1/2 of crumb mixture in the bottom of the pan. Add layer of softened ice cream, layer of preserves. Repeat layers. Top with remaining crumbs.
Freeze.
