8 Quick One-Pot Meals

1. Let’s start off with Mediterranean Pan Roasted Salmon – a simple skillet dish with salmon, cherry or grape tomatoes, along with fennel bulb and seasonings.

• 1 teaspoon dried basil
• 1 teaspoon garlic powder
• 1/2 teaspoon crushed oregano
• 1/2 teaspoon crushed rosemary
• 1/2 teaspoon sea salt
• 4 salmon fillets
• 5 teaspoons olive oil
• 2 tablespoons sugar
1 medium fennel bulb, sliced
• 1 cup cherry or grape tomatoes, halved
• lemon wedges, for serving

Mix the seasonings in a small bowl, and sprinkle 2 teaspoons of the mixture over the salmon fillets.  Reserve remaining seasoning mixture and set aside.

Heat 3 teaspoons olive oil in large skillet on medium-high heat; place salmon in skillet and cook for 5 minutes.

Meanwhile, add the sugar and remaining 2 teaspoons of olive oil to the reserved seasoning mixture and mix well.  Add fennel and tomatoes to the mixture; toss to coat.

Turn the salmon fillets over in the skillet and place fennel mixture around the salmon; cook for 6 minutes or until fish flakes easily with fork.

Serve with lemon wedges.


2. In this Skillet Swiss Steak dish, cube steaks are cooked with bell peppers, onions, diced tomatoes and seasonings, including Worcestershire sauce for a hearty one-pot meal.

3. Broccoli, Rice and Chili Beans is hearty skillet full of spicy flavor; rice cooked with vegetables and beans and topped off with some crisp bacon!

3 Steps to a Tropical Dinner

tropical view, tropical dinner, tropical recipes, organize recipes onlineDoes the cold weather make you long for a dish that will remind you of the Tropics and bring a little warmth and sunshine to your kitchen?  You’re ready for 3 steps to a tropical dinner!  While macadamia nuts can be a little on the pricey side (so keep your eyes out for a good deal on them), you don’t need very many of them to provide a good crushed coating for this Macadamia Crusted Chicken dish topped with Pineapple Apple Salsa.  Yum!

Last week this dish was a big hit at our house, and it is so quick and easy to prepare, you’ll wonder why you haven’t tried it before (I think it would work really well with any kind of fish, too!).

1. Make the Pineapple Apple Salsa – you can make this ahead of time, even the day before if you want, and keep it in the fridge until you’re ready to serve.

1 large apple – cored, diced
1-1/2 cups diced fresh pineapple
1 jalapeno pepper, de-seeded, diced
1/2 cup diced yellow bell pepper
2 tablespoons fresh lemon juice

In a medium-sized bowl, combine all of the salsa ingredients and stir; set aside or cover and refrigerate until ready to serve.

2. Make the Macadamia Crusted Chicken – seriously you will be ready to eat your tropical dinner in about 15 minutes!

2 boneless, skinless chicken breasts, cut in half and pounded to 1/2-inch thickness (or use chicken tenderloins)
1 teaspoon salt
1 teaspoon black pepper
6 ounces macadamia nuts, finely chopped or crushed
3 tablespoons olive oil

Place crushed nuts in a shallow bowl or spread on a sheet of waxed paper.  Place 1 piece of chicken on the nuts and press firmly to make the nuts stick to the meat; then gently flip the piece of chicken and repeat.  Carefully set aside and repeat with remaining chicken (or place each piece directly into heated skillet).  Heat oil in large skillet over medium heat; cook chicken pieces until golden on one side (about 3-5 minutes).  Use a spatula to carefully turn chicken over and continue cooking for another 3-5 minutes until cooked through and golden.

3. Plate the chicken on 4 plates and top with the Pineapple Apple Salsa.  Serve and enjoy!

Let’s make the perfect smoothie.  If you are a little terrified of being in the kitchen, this is a simple recipe to try.  Most smoothies tend to incorporate a combination of these common steps.

a) Make it creamy by adding a nut butter such as peanut, almond, chia or some other combination

b) Fortify with a protein powder

c) Add in a liquid component – juice, milk, almond milk, soy milk, or water

d) Add some greens – an avocado, spinach, or kale

e) Add extra nutrition – with flax seeds, chia seeds, pumpkin seeds, etc.

f) Add some fruits – fresh or frozen blueberries, strawberries, apples, mango, pineapple, bananas, blackberries, raspberries, etc.

Here’s a simple recipe to get you started (remember to taste-test and adjust the ingredients as you like – a little more berry or liquid, etc.)


1/2 cup mixed frozen berries (or desired fruit)

1/2 frozen banana

1 1/2 cups baby spinach

1 teaspoon chia seeds

1 serving of vanilla protein mix

15 ounces purified water

1 handful of ice

shredded chicken meat on plate with forksWhat do you do when you find a recipe that calls for “cooked chicken”?  I mean, it’s not like most of us keep some of that sitting around, right?  And you may not think there’s time to prep that and get dinner on the table quickly.  But here are three simple ways to make “cooked chicken” and still enjoy your dish for lunch or dinner.


1. Cooked Chicken – Prep Ahead in Crockpot
If you are planning your meals for the week ahead of time, this is the best time to notice the need for “cooked chicken” and cook it ahead in the crockpot.

• 6 chicken breasts, skinless, boneless
• 2 cups chicken broth
• pepper, to taste
• any other desired seasoning, optional (minced garlic or onion, fresh herbs, etc.)

Place all ingredients in the crockpot and allow to cook on low heat for 6-8 hours (adding more water/broth, if needed).  When finished cooking, remove chicken and shred or dice (as desired); store in airtight containers in the fridge until ready to use (for up to 5 days), or freeze for up to 2 months.

2. Cooked Chicken – In About 20 Minutes
Okay, maybe you didn’t prep ahead for the week, and find yourself needing cooked chicken for dinner tonight.  If you need time to prep other ingredients anyway, cook up the chicken in the skillet on the stovetop with this easy method while you’re prepping the vegetables or other ingredients:chicken cooking in skillet, cooked chicken, chicken recipes, recipe organizer, online recipe storage

• 1 tablespoon olive oil
• 4 chicken breasts, skinless, boneless
• salt and pepper, to taste
• 1 cup chicken broth

In a large skillet, heat oil over medium heat. Season chicken with salt and pepper on both sides, then place into skillet and let cook about 5 minutes or until golden brown.  Turn over the chicken pieces, add the chicken broth, and cover skillet with lid, allowing chicken to simmer over medium heat for 8-10 minutes or until cooked through (if needed, add extra water or broth while cooking to keep chicken from drying out).  Remove chicken from skillet & shred or dice after allowing to cool for a few minutes.

3. Chicken in the Microwave – In About 10 Minutes
While this may be the least desirable of the methods, it is definitely the fastest, and will always work in a pinch (and is still better than using canned chicken!).

• 1 tablespoon olive oil
• 2 chicken breasts, skinless, boneless
• salt and pepper or other seasoning, to taste

Rub chicken breasts with a little olive oil and sprinkle with salt and pepper on both sides; place on plate in microwave and cook on high heat for 6-10 minutes (depending on size of chicken pieces) until cooked through.  Let cool for a couple of minutes before shredding or dicing.

With these three simple methods for preparing “cooked chicken”, you will never need to pass up that delicious sounding dish just because there’s no pre-cooked chicken on hand.

Crispy Party Fingerfood

Last week when I was making potato soup for dinner, I could not decide what type of bread, roll, or cracker to have with it.  I wanted something a little bit different than our ordinary fare of biscuits, dinner rolls, or variety crackers.

After looking around online and through cookbooks, I saw several “cheese straw” recipes that looked interesting and thought that perhaps this mildly crunchy cross between cracker and bread would be perfect!  Most of them called for puff pastry, though, which I did not have on hand.

Then voila! An option with basic flour and butter ingredients – which I did have!  So, I started with a recipe from Smitten Kitchen and made some adjustments to suit the ingredients I had on hand as well as our family taste preferences.

In about 20 minutes, I had a unique cracker type side to go with our soup, and we had a new favorite recipe.  (And, remember, you can keep all your favorite recipes in one place right here at Dish Dish).

Cheese Straws (printable recipe)

1-1/2 cups finely shredded cheddar cheese
4 tablespoons unsalted butter (or stick margarine), softened and sliced
3/4 cup flour (plus a little more)
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/8 teaspoon garlic powder
1 tablespoon milk

1. Preheat your oven to 350 degrees F.

2. In a bowl, combine the cheese, flour, salt, red pepper and garlic and stir.  Add butter slices and use a pastry blender or fork to “cut” the butter into the flour mixture until the mixture resembles coarse crumbs.  Stir in the milk and press mixture together until dough can be formed into a ball.

3. Lightly flour a surface and rolling pin; roll the dough onto the surface in an 8-x-10-inch rectangle, about 1/8 inch thick.  With a pizza cutter, slice the dough into thin strips, about 1/3-inch wide (if you have to use a knife for the cutting, dip it in flour to keep dough from sticking).  Carefully place the strips onto an ungreased cookie sheet and leave at least 1/4 inch between strips.  Don’t worry if the dough sags or tears as you transfer them; the straws taste great at any length!

4. Place the cookie sheet on the middle rack of the oven and bake the cheese straws for 12-15 minutes or until very lightly browned.  Remove from oven and allow to cool on a rack.

5. These are great served at room temperature.  Or store them in a sealed container in the fridge for two days (and bring to room temperature before serving).

While I didn’t try it this time, I think it would be great with a light egg wash brushed over them before baking and some poppy seeds sprinkled on top.  I’ll have to try it that way next time.

Super easy and inexpensive – include a tag with the printed recipe and directions for the gift recipient.

•  3-1/2 cups sugar
•  2-1/4 cups cocoa
•  1 tablespoon table salt

In a large bowl, combine all ingredients except milk, and use a whisk to stir and mix well.  Store the mixture in an airtight container until ready to share.

Fill a decorative lidded jar with the mix, wrap with a ribbon and attach a tag with the printed directions for mixing up a cup of hot cocoa.

Make a batch of these and tie with pretty ribbon or string for a delightful gift.

•  18 hot drink straws or stirrers (found near coffee filters in the store, usually)
•  9 peppermint swirl candies
•  9 wrapped caramels
•  parchment paper and cooking spray (for baking)

For peppermint stirrers: Line cookie sheet with parchment paper and lightly coat with cooking spray.  Heat oven to 300 degrees F.  Unwrap candies and stagger 8-10 peppermint candies on the baking sheet (don’t bake too many at use or they’ll cool before you can get them on a stick).  Bake for 7 minutes. Remove from oven; stick straw ends into candy using a twisting motion.  Let cool completely, and then peel off the baking sheet.

For the caramel stirrers, simply press one caramel onto the each of each straw.

Wrap the stirrers individually (or in pairs) in a small plastic food bag or plastic wrap and tie with a ribbon or string.  Voila! Ready for giving.

These take only a few minutes and look like you spent all afternoon.

•  thick pretzel sticks
•  white melting chocolate
•  dark melting chocolate
•  wax paper

1. In separate bowls, melt both the white chocolate and the dark chocolate in the microwave (in 30 to 60 second bursts, so you don’t burn it, stirring in between).  Spread some wax paper out on the cabinet or a baking sheet.

2. Dip some of the pretzel sticks into the white chocolate and lay on wax paper to harden; dip some in the dark chocolate and lay on wax paper to harden.

3. After a couple of minutes (as soon as chocolate appears to be setting), use a fork to drizzle some of the white chocolate over the dark chocolate pretzels and vice versa, for a colorful and festive look.  Once chocolate has completely cooled and set, pick up pretzels, wrap in a plastic foodie gift bag, and tie with colorful ribbon for a quick, easy, delicious gift.

Press this mix into a jar and cover with a decorated lid for a festive gift with attached baking instructions.

•  One 2-quart glass jar
•  2-3/4 cups flour
•  1-1/4 teaspoons baking powder
•  1/2 teaspoon baking soda
•  1/2 teaspoon salt
•  1/2 cup dark cocoa powder
•  1 cup packed light brown sugar
•  1 cup granulated sugar
•  1 cup milk chocolate chips
•  1 cup white chocolate chips
•  1 cup red and green M&M’s mini’s

1. Combine 1 and 3/4 cups of flour with the baking powder, baking soda and salt; set aside.  Combine the cocoa with remaining cup of flour.

2. Pour half of flour-cocoa mixture into jar; press down firmly.  Add half of plain flour mixture and press down.  Repeat this step.

3. Top with brown sugar and then granulated sugar; pressing down each layer.  Top off with chocolate chips and M&M’s.

4. Print baking directions to attach: Blend 2 sticks melted and cooled unsalted butter with 3 eggs, 1/3 cup milk and 2 teaspoons vanilla extract.  Stir in cookie mix until well blended.  Drop by tablespoons onto greased cookie sheet and bake at 350 degrees for 12-14 minutes or until firm.

Toast up these nuts with sweet seasonings and package nicely for family and friends this holiday season.

•  2 egg whites
•  1 tablespoon vanilla
•  2-1/4 cups pecan (or walnut) halves
•  1/4 cup white sugar
•  1/4 cup brown sugar
•  1/4 teaspoon salt
•  1-1/2 teaspoons ground cinnamon

1. Preheat oven to 225 degrees F.  Lightly grease a rimmed baking sheet.

2. In a small bowl, combine egg white and vanilla; beat until fluffy.  Fold in nuts and coat them evenly.

3. Combine sugars, salt and cinnamon in a lidded shaker or cup; dust nuts evenly with sugar mixture and spread nuts on prepared pan.

4. Bake until toasted and fragrant, stirring every 15 minutes, for about 1 hour.  Cool on pan, then store in airtight container.
