Supporting Our Local Food Bank

Many times after the winter holiday season is over and gone, it is easy to forget that families in need in our community are still depending on resources such as the local food bank to provide healthy family dinners.

During the holidays, we are often reminded to donate canned goods or funds to local food charities, thinking of providing holiday meals for hungry children, seniors and families.  But our local food bank needs the support of the community year-round in order to continue providing for those less fortunate.

In 2015, North Texas Food Bank provided over 63 million meals to individuals in the North Texas area.  That’s a lot of hungry people who needed help, and we are glad to assist NTFB by donating!

If you and your family would like to be involved in helping the food bank, consider donating through their website and help feed a hungry family this week.  Just $1 can provide 3 meals (a much more effective use of the dollar than purchasing canned goods for a food drive, too)!  Other ways to be involved include volunteering at the food pantry, hosting a community food drive with your friends and neighbors, or even running an online Virtual Food Drive for your group.

In addition to providing food for families, the Food Bank runs some pretty interesting programs like the Community Kitchen which is able to produce around 7,500 meals each week for local homeless shelters and soup kitchens, while at the same time  providing culinary training for participants in the Texas Second Chance program, giving them on-the-job experience as they help prepare meals for others.

During the month of May in the North Texas area, be sure to keep an eye out for fliers from your postal carrier and set out canned goods or non-perishable food items by your mailbox for collection during the Stamp Out Hunger food drive hosted by the National Letter Carriers Association.

Instead of thinking of your meal planning efforts as a “diet”, focus on the wonderful foods you can choose to enjoy more often and the diabetic-friendly recipes you’ll get to try.  Keep in mind these helpful tips for feeling better, staying healthy, managing blood sugar and enjoying life with your family.  There are lots of natural foods that can help you manage diabetes effectively.

1. Add Some Spice to Life
Spice up your dishes with a little clove, cinnamon, turmeric, and other spices (check this out); their antioxidants help prevent diabetic-associated inflammation in the body.

2. Enjoy Citrus Fruit and Berries
Enjoy citrus fruits like oranges, lemons, and grapefruit, plus your favorite kind of berry (blueberry, strawberry, raspberry, blackberry …) to supply the body with plenty of Vitamin C, fiber, as well as healthy antioxidants to help the body fight off inflammation.  Toss them all together in a fruit salad, layer them with some yogurt for a breakfast parfait or healthy dessert, or enjoy them in one of the diabetic dessert recipes below.

3. Go Green

5. Savor Sweet Potatoes
Exchange sweet potatoes in your recipes for white potatoes for a reduced glycemic index dish, while enjoying the healthy fiber and delicious fresh taste of this brightly colored veggie.

6.  Avoid Sugary Drinks
Sugar-sweetened beverages make up a large percentage of the “empty” calories many people drink each day.  Drink more water!  (If you prefer flavor in your water, add some fruit or cucumber slices to your water pitcher each morning and enjoy throughout the day).

7. Portion Control
Think before eating about how much you’re going to put on the plate, and how much of the plate will be covered by which type of food.  MyPlate is a handy tool for this, and suggests that half the plate should hold vegetables and fruit, with the other half divided between protein and a whole grain (such as brown rice, quinoa, barley, whole grain pastas or bread, etc).

8. Tomatoes
There are so many ways to enjoy tomatoes, it’s easy to incorporate them almost every day and enjoy the health benefit of vitamins C and E along with iron.  Slice fresh tomatoes on a sandwich or salad, roast tomatoes to serve over your main dish, add diced tomatoes to a favorite soup or casserole, or get your tomatoes in a sauce or salsa served with whole grain pasta or tortillas.  Delicious and easy every day, like in this Tomato, Basil and Feta Salad.

9. Beans
Whether you prefer kidney, navy, black, pinto, or other types of beans, their high fiber content, protein, magnesium and potassium content make them a no-brainer healthy addition to your dishes.  (Remember to rinse and drain if using canned varieties).  Reduce the meat or pasta content in a favorite dish by adding in your favorite beans instead (in soups, casseroles, and salads).  (See Easy, Healthy Recipes with Beans)

10. Delight in Dessert
Just because you’re making changes and better choices to be healthy, doesn’t mean you have to eliminate dessert.  Decide to delight in healthier diabetic dessert options (in reasonable portions) like:

1. Honeyed Grapefruit – Grapefruit and banana slices drizzled with honey and sprinkled with fresh chopped mint.

2. Strawberry Shortcake – A small slice of sponge cake topped with a dollop of fresh whipped cream and fresh sliced strawberries or other favorite berries.

3. Berries with Maple Cream – Serve 2/3 cup of fresh blackberries and raspberries topped with Maple Cream (whisk together 1/4 cup of maple syrup with 3/4 cup fat-free sour cream).

10 Quick Tips about BBQ Tools for your Grilling Season | Grill, RecipesIs there ever a bad time of year for cooking up some delicious BBQ on the grill? Okay, maybe if you live where there is snow 6 months of the year, but around here we can use our barbecue grill just about year-round.

One of the frustrating problems with grilling, though, can come if your BBQ tools are not quite sufficient or up to the task. I mean, don’t you just love it when you grab a piece of meat to take it off the grill and lose your grip, … watching helplessly (in slow motion) as it falls through the grate (or to the ground)?

Yikes! And after all that hard work!

So, if you’re gearing up for grill season and thinking about what kind of tools you’ll need, we have 10 quick tips about BBQ tools for a grand grilling experience!

I really enjoyed using the Makimy BBQ Tool set this week for our BBQ dinner. (I did receive a set for this post; all opinions expressed are wholly my own).

1. Length of Tools
The length of the tools, especially the spatula, is particularly relevant since you want to be able to safely reach in across the hot grill to flip burgers, rotate corn on the cob or potatoes without having to hold your hands too close to the hot flame, right?  A good length is around 16 inches, making it long enough to keep hands safe, but not too unwieldy to handle.

2. Heat Resistance
Pick out tools made from a sturdy and heat resistant material, so they won’t bend or start to melt on you when they are over the fire a little too long.

3. Good Handles
Thick silicone handles provide a comfortable handle and grip while also providing protection from the heat of the stainless steel portion of the tool.  Make sure the material is comfortable to grip, too, so you don’t get cranky if you have to work with them for very long.  If the handles are plastic, they probably won’t hold up as well to the heat, even if they are marked “heat resistant”.

4. Strength and Sturdy Grip
Look for tools that are strong enough to handle picking up a heavy roast or rack of ribs and with a strong enough grip (speaking of tongs) that you don’t drop those ribs after grabbing hold of them.

5. Hanging Option
This feature is really just a “nice-to-have” option, but tools with a cut-out or loop for hanging them up are nice to have for easy hanging on grill hooks (if you have them) or storing on cabinet hooks rather than in a cluttered drawer of kitchen gadgets.

6. Serrated Edge
It’s really nice for the spatula to have a serrated edge for tenderizing meat or to make a necessary cut while at the grill.  It probably isn’t something you’ll need to use often, but definitely nice to have instead of searching around for another tool to do that job when you’re ready to get cooking.

7. Prongs or Scallops on Tong Edges
While at first this design may seem more for aesthetics than utility, since it is pleasing to the eye, having those prongs on the side of the tongs makes it much easier to pick up or move around small items on the grill, such as asparagus stems or sliced veggies, without losing them through the grates.BBQ chicken with BBQ spatula

8. Dishwasher Safe
Okay, this should be a no-brainer, because who really wants to spend any more time than necessary on clean-up after enjoying this great BBQ dinner.  It’s really nice to simply toss those babies in the dishwasher for an easy clean.  And after running this set of tools through the dishwasher, they came out crystal clean and none the worse for wear!

9. Strong Stainless Steel
While most BBQ tools tout being made of stainless steel, look for a heavy-duty, professional grade option if you use the tools consistently.  The heavy-duty not only feels great when handling, but is strong enough to endure regular use without giving way under the heaviest grilling tasks.

10. Bottle Opener
Okay, we left this one ’til last, but the BBQ spatula with the Makimy set has a built-in bottle opener; definitely not a must-have, but seriously handy for popping the lid off a nice cold drink while you’re slaving over the grill.  (Just keep a paper towel or rag handy for wiping off the spatula, if needed, before opening up your favorite beverage.)

The Makimy BBQ Tool Set stood up to all of our expectations and desired features.  The tongs have a very strong grip, without being difficult to squeeze and maneuver.  The beveled edge on the spatula made it easy to slide under the items on the grill.  They cleaned up really well in the dishwasher, and are so sturdy that I’m sure they’ll last a very long time.

My husband commented that he really liked them as well (even though I did the cooking this time around); he liked the grip, strength, feel, and look of the tools – so they would make a great gift, too!  (And my favorite use for the fork tool is roasting a couple of marshmallows over the flame for s’mores – hehehe!)
